I love waffles. And breakfast. I love all kinds of breakfast. Except I don't eat sugar so all of the especially yummy breakfast foods—like doughnuts and crepes and scones and muffins and apple fritters—are out. Actually, I don't eat apples, either, so apple fritters are especially out but that's another story for another day. I do eat sugar every once in a rare while (like when Michael and the kids make me a vanilla cake for my birthday) but mostly sugar makes me feel awful so I try to avoid it all the other days of the year.
When asked what I wanted for my birthday breakfast, I answered with Breakfast Potatoes and Sauteed Onions, Crisp Bacon (not pictured), and Buttermilk Waffles. I'm pretty sure I always ask for the same thing. It is so, so yummy. If you are a person who can drench your waffles in maple syrup like the rest of my family can, this recipe will make you very happy. Or, if you are a person who only melts a mound of butter all over the top of waffles like I do, you will be very happy, too. Bottom line is waffles = happy.
Recipe given to me by my bro-in-law, Andy (Andy, this is still my favorite waffle recipe!):
Andy's Buttermilk Waffles
1–3/4 cups flour (we use spelt)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups buttermilk
1/3 cup canola oil (we use butter)
2 eggs
(We also added a handful of blueberries from the garden)
Preheat waffle maker. If you do it right, the batter will be ready before the waffle maker. Whisk the flour, baking powder, baking soda, and salt in a large bowl. Add the buttermilk, oil (or butter), and eggs. Whisk until smooth. Waffle maker hot yet? Ours takes 1/2 cup batter per waffle. Listen to "Waffle King" by Weird Al Yankovic if available. If not available, play it over and over in your head until everyone is served. Don't plan on eating as you will be constantly watching the waffle maker. Have syrup ready.
